From the district Misti-Tsarikli

Argialou dish
3-5 teacups of water
1 cup of crushed grain (bligouri)
1 big bowl of strained yogurt.
Instructions
Put the crushed grain and the water in a saucepan. Boil it, taking care not to become thick.
As soon as it Boils, let the mixture cool down. Stir the yogurt with a spoon and add it to the cold mixture. Add salt to your taste



Gilidiria
1 cup of flour
½ cup bligouri ( crushed grain)
some water
oil
chopped onion
salt
Instructions
Mix flour, bligouri and water. Make small balls-gilidiria. Put water in a saucepan, add oil onions, the small balls (gilidiria), salt. Let them boil.



Goultsigalat dish
1 litre milk
2 cups bligouri (crushed grain)
salt
Instructions
Boil the milk, add bligouri, salt and let the mixture boil very well



Zomi
2 cups water
some oil
flour
2-3 egg
salt
Instructions
In a saucepan put water, oil and as much flour as it takes to become thick.
As soon as it is ready add the eggs and stir well.
Add some salt and take it away from the fire. It can be served after a while.


Mandou
Noodles
1 teaspoon of butter
pestle garlic
strained yogurt
Instructions
Boil the noodles. Drain them. Add the strained yogurt and the garlic



Xovota eggs
1 glass of water
4 eggs
salt
Instructions
In a frying pan put the water and boil it. As soon as it boils, add the eggs. Cook them untill the water finishes. Add salt to your taste and serve.


Pintous
1 litre of milk
2 eggs
2 spoonfulls of flour
salt
a small cup of bligouri
Instructions
In a saucepan put the milk, the crushed grain, the eggs (beaten in advance) the flour and the salt. Boil the mixture. Stir continuously.
You can use it as cream for your pasticcio


Sougatous
4 eggs
2 cups of milk
1 cup of flour
salt
Instructions
In a bowl beat the eggs. Add flour, milk and salt. Mix well until the dough becomes smooth.
In a frying pan some oil.
Take some dough with the spoon
Put it in the hot oil.
Repeat.
As soon as sougatous are ready we serve.


Bouraniz ( salad)
beet roots
yogurt
garlic
Instructions
Boil some beet roots
Chop them
Put them in a bowl and yogurt with some garlic


ΑΝΑΚΟU

Karistirma

2-3 onions
5-6 eggs
some kind of fat.

Instructions
Ina frying pan put the fat
Chop the onions
Sizzle them and add the eggs ( beaten in advance) with some flour
